Ingredients:
4 Large Chicken Breast
1 7oz Can of Hernandez Salsa Casera
1 zucchini
1 medium sized onion
2 Tablespoons of olive oil (any oil)
16-24 Corn tortillas
1 cup of Vegetable Oil
Refried beans (optional)
Grated Cotija Cheese or grated parmesan cheese (optional)
Sour Cream (optional)
Avocado slices (optional)
(Serving size varies from 16 - 24 tostadas)
COOKING-
1.) Boil your chicken breast in some water seasoned with salt, pepper and garlic salt.
2.) While your chicken is boiling - Slice zucchini into 1 in slices. Chop whole onion.
3.) Heat 2 tablespoons of olive oil and place into a large pan. Saute the zucchini and onions over medium heat. (Place aside if the chicken is still cooking.)
4.) Once chicken breast is fully cooked. Drain water and shred chicken. I like to place mine into a food chopper and chop it up. -Less work and a lot quicker.
5.) Add the shredded chicken and sautéed veggies into the large pot.
6.) Add the can of, "Salsa Casera," with the chicken and veggies mixture.
7.) Mix well. Cook on low- covered. Stirring chicken occasionally.
8.) (If you are adding beans start warming up beans now.) Heat up the 2 cups of vegetable oil.
9.) Add one or two corn tortillas to the hot oil. (If you fry more than one at a time make sure the tortillas don't stick to each other.) Let the tortilla cook for about 30 seconds on each side.. or until each side is fully cooked and harden. They should be a soft golden brown color. Place tostada onto a napkin to capture left over oil. Continue frying tortillas. Don't forget to stir the chicken! =)
10.) Once all the tostadas are cooked you can begin preparing the toppings. We like to squirt on some sour cream. So, I place a dollop or sour cream into a Ziploc bag and cut off on corner so we can pipe the sour cream onto our tostadas. We also love topping it off with avocado slices. We usually top them off with grated Mexican Cotija cheese OR grated Parmesan cheese. Both go well.
11.) SERVE AND ENJOY!
